Instructions

Put the rinsed rice and water into a heavy pot. Bring it to a boil.

Turn the heat down to low. Simmer for about 30 minutes, stirring occasionally, until the rice breaks down completely.

Add more water as needed to keep a smooth, porridge-like texture.

Meanwhile, heat oil in a small frying pan. Fry the sliced garlic until golden and crisp.

Lift out the fried garlic with a slotted spoon. Set it aside on paper towels to drain.

Season the congee (rice porridge) with salt and crushed black pepper.

Ladle the sanpiau (rice porridge) into serving bowls.

Top with the fried garlic and chopped spring onion. Serve hot.
Chef's tips
Stir often during the last 10 minutes of cooking so the rice does not stick. The congee should be smooth and pourable.
