Instructions

    Heat a pot. Fry the onion, ginger and garlic gently until soft.

    Add the chicken pieces. Stir for a few minutes until lightly browned on the outside.

    Mash the axone (fermented soya bean paste) with a little water. Stir it into the pot.

    Add the sliced fermented bamboo shoot and slit green chilli.

    Pour in water and bring it to a boil.

    Cover the pot. Simmer gently for 20 minutes until the chicken is cooked through.

    Take off the lid. Simmer for a further 8โ€“10 minutes until the gravy thickens slightly.

    Add salt to taste. Serve hot with rice.
