Instructions

    If using salt cod, soak for 24 hours in the fridge, changing the water two or three times, then drain.

    Simmer the cod gently in fresh water for 10 minutes, then remove, flake, and discard skin and bones, reserving the cooking liquid.

    Add the onion, summer savory, pepper and potatoes to the reserved liquid, topping up with water to cover, and simmer 20 minutes until potatoes are tender.

    Return the flaked cod to the pot and simmer for 5 more minutes.

    If using dumplings, mix flour, baking powder and milk into a soft dough, drop into the simmering broth, cover and cook 15 minutes without lifting the lid.

    Taste before adding salt, since cod can still carry a lot of it.
