Preheat the oven to 180C (350F) and line baking sheets with parchment.

Whisk together the oats, flour, baking soda and salt.

Cream the butter, maple syrup and brown sugar until fluffy, then beat in the egg and vanilla.

Stir the dry ingredients into the wet mixture until just combined.

Drop rounded tablespoons of dough onto the baking sheets, spaced well apart.

Bake 11-13 minutes until the edges are golden but the centres still look slightly soft.
