Instructions

Whisk together the flour, baking soda, ginger, cinnamon, cloves and salt.

Cream the shortening and brown sugar together, then beat in the molasses and egg.

Stir the dry ingredients into the wet mixture to form a soft dough, and chill for 30 minutes.

Preheat the oven to 180C (350F) and line baking sheets with parchment.

Roll the dough into balls, coat each in granulated sugar, and place on the sheets.

Bake 10-12 minutes until the tops crackle and the edges are set.

Cool on the sheet for a few minutes before moving to a rack.
