Combine the cauliflower, cucumber, onion and green tomatoes in a large bowl, sprinkle with the salt, cover with water, and let stand 4 hours or overnight in the fridge.

Drain and rinse the vegetables well.

Whisk the sugar, flour, dry mustard and turmeric together in a large pot, then whisk in the vinegar until smooth.

Bring the vinegar mixture to a boil, stirring constantly, until it thickens.

Add the drained vegetables and simmer 10 minutes until just tender but still with bite.

Ladle hot into sterilized jars, leaving 1.5cm headspace, and remove air bubbles.

Wipe rims, apply lids and rings, and process in a boiling-water bath for 15 minutes for 500ml jars, adjusting for altitude.

Cool jars on a towel, check seals after 24 hours, and store any unsealed jars in the fridge for immediate use.

Always process in a boiling-water bath with correct headspace and a tested processing time; do not rely on the vinegar and hot filling alone to make jars shelf-stable.

Storage
