Season the lamb cubes with salt. Brown them in batches in olive oil in a Dutch oven, then set aside.

Add the onion, garlic, and bell pepper to the pot. Cook until softened, about 8 minutes.

Stir in the paprika. Cook for 30 seconds until it smells fragrant.

Pour in the white wine and scrape up all the browned bits from the bottom.

Return the lamb to the pot. Add the tomatoes, broth, and bay leaf, then bring to a simmer.
