Let the roast sit at room temperature for about 1 hour. Pat it dry completely.

Mix the salt, pepper, garlic, rosemary, and olive oil into a paste. Rub it all over the roast.

Roast at 450°F for 20 minutes to brown the crust.

Lower the oven to 325°F. Roast for about 90-100 minutes more until a meat thermometer reads 120-125°F for medium-rare.

Remove the roast and loosely cover it with foil. Let it rest for 20-25 minutes before slicing.

Pour off extra fat and place the pan over medium heat. Add beef broth, scrape up the browned bits, and simmer.

Whisk the sour cream and horseradish together to make the horseradish cream.

Cut the roast across the lines of the meat into thick slices. Serve with the pan juices and horseradish cream.
