Instructions

Heat the olive oil in a large skillet over medium heat.

Add the sausages and brown them on all sides, about 8 minutes. Take them out and set them aside.

Add the sliced onions and peppers to the skillet. Cook until soft and lightly charred, about 10 minutes.

Stir in the garlic. Cook for 1 minute more.

Put the sausages back into the skillet and cover it. Cook for another 8 to 10 minutes until cooked through.

Cut open the sub rolls. Fill each roll with a sausage and a large scoop of peppers and onions.
