Instructions

Whisk together the flour, baking powder and salt in a large bowl.

Rub in the lard or shortening with your fingers until the mixture looks like coarse crumbs.

Add the water or milk gradually, mixing just until a soft dough forms; do not overwork it.

Shape the dough into a round or flatten into individual rounds about 2 cm thick.

To pan-fry, heat oil or lard in a heavy skillet over medium-low heat and cook each round 6-8 minutes per side until golden and cooked through.

To bake instead, place on a baking sheet in a 200C (400F) oven for 20-25 minutes until golden and it sounds hollow when tapped.

Cool slightly before slicing and serving warm.

Keep the fat cold and handle the dough as little as possible for a tender bannock.
