Toss the vegetables with pickling salt, cover with cold water and let stand 4-6 hours or overnight; drain and rinse well.

Blanch the vegetables briefly in boiling water until just tender-crisp, then drain.

Prepare 6 half-pint jars, lids and a water-bath canner; keep jars hot until filling.

Whisk mustard, turmeric and flour with a little of the vinegar to a smooth paste, then whisk into the remaining vinegar and sugar in a pot.

Bring the sauce to a boil, stirring constantly, until thickened, then fold in the drained vegetables and return to a simmer.

Pack hot into jars, leaving 1.5 cm headspace, and remove air bubbles.

Wipe rims, apply lids and rings fingertip-tight, and process in a boiling-water bath for 15 minutes (adjust for altitude).

Cool jars undisturbed for 24 hours and confirm the lids have sealed before storing.
