Instructions

    Drain the soaked peas and tie loosely in a pudding bag or muslin cloth, leaving room to swell.

    Lower the bag into a large pot of simmering water, or alongside simmering salt meat.

    Simmer gently for about 2 hours until the peas are completely soft.

    Lift out the bag and turn the peas into a bowl.

    Mash well with butter, egg and pepper until smooth and holding together.

    Press into a dish or shape into a mound and slice to serve warm.

Tie the bag loosely, since the peas expand considerably as they cook and a tight bag will burst.
