Instructions

Melt 25g of the butter in a frying pan and fry the onions until soft and translucent.

Mix the cooked onions, sage, breadcrumbs, beaten egg, salt, and pepper in a bowl to make the stuffing.

Pack the stuffing loosely into the turkey neck cavity and secure the skin flap with cocktail sticks.

Rub the remaining softened butter all over the turkey skin and season generously with salt and pepper.

Place the turkey in a roasting tin, lay streaky bacon over the breast, and pour stock into the tin.

Cover the tin loosely with foil and roast for two and a half hours, basting occasionally with pan juices.

Remove the foil and bacon for the final thirty minutes to crisp and brown the skin.

Check the thickest part of the thigh reaches 74°C, then rest the bird under loose foil for thirty minutes before carving.
