Instructions

Place the blackberries, chopped apples, crab apples, elderberries, and water into a large preserving pan.

Simmer gently over medium heat on the hob for thirty minutes until the fruit is soft and pulpy.

Mash the fruit lightly with a potato masher to release maximum juice.

Pour the hot fruit pulp into a scalded jelly bag suspended over a deep bowl.

Leave the juice to drip naturally for at least four hours without squeezing the bag.

Measure the strained juice and return it to the cleaned preserving pan with the sugar and lemon juice.

Heat gently, stirring continuously until the sugar has completely dissolved.

Bring to a rapid rolling boil for ten to fifteen minutes until reaching setting point (105ยฐC).

Skim off any surface scum, stirring in the butter to clear any remaining froth.

Ladle the hot, clear jelly into warm sterilised jars and seal immediately.
Chef's tips
Never squeeze the jelly bag while straining, as pressing the pulp forces fine solids through and makes the jelly cloudy. Place two saucers in the freezer beforehand so you can test the wrinkle of the jelly if you lack a thermometer.

Storage
