Pour boiling water over the oats and let stand until cooled to lukewarm.

Dissolve the yeast in the warm water with a pinch of the honey; let sit until foamy.

Stir the yeast mixture, remaining honey and melted butter into the cooled oats.

Add the flour and salt, mixing to a soft dough, then knead for 8-10 minutes until smooth.

Place in an oiled bowl, cover, and let rise until doubled, about 1 hour.

Shape into a loaf, place in a greased tin, sprinkle with extra oats, and let rise again for 30-40 minutes.

Bake at 190C (375F) for 30-35 minutes until golden and hollow-sounding when tapped.

Make sure the soaked oats have cooled to lukewarm before adding the yeast, or the heat will kill it.
