Whisk together the flour, baking powder, salt and sugar if using.

Cut the cold butter into the flour until it resembles coarse crumbs.

Add the milk and stir just until a soft dough forms.

Turn out onto a floured surface, pat gently to about 2.5 cm thick, and cut into rounds.

Place close together on a baking sheet for softer sides, or apart for crisper sides.

Bake for 12-15 minutes until risen and golden on top.
