Instructions

    Soak the rice, urad dal (black lentils), and fenugreek seeds separately for at least six hours.

    Grind the soaked urad dal first until it turns into a smooth, airy batter.

    Grind the soaked rice together with the cooked rice into a slightly grainy batter.

    Pour both batters together into a bowl. Add salt and mix well.

    Cover the bowl and leave the batter in a warm spot overnight to ferment and rise.

    The next morning, stir the batter gently. Mix in a little water if needed to adjust the thickness.

    Heat a tawa (flat griddle). Pour a ladle of batter onto it and spread gently into a thick round.
