Score the fish twice on each side and season inside and out.

Stuff the cavity with lemon slices, dill and half the onion.

Scatter the remaining onion in a buttered dish and lay the fish on top.

Dot with the rest of the butter.

Bake at 200C for 25-30 minutes until the flesh at the backbone is opaque.

Spoon the pan butter over and serve straight from the dish.
