Instructions

Heat the oven to 200C and melt the butter in the tray inside it.

Whisk the eggs, milk, sugar and salt, then whisk in the flour until smooth.

Pour the batter into the hot buttered tray.

Bake for 28-30 minutes until puffed, browned at the edges and set but custardy in the middle.

Let it settle for 5 minutes โ it will sink, which is correct.

Cut into squares and serve with jam and coffee.

The tray must be properly hot; a cold tray gives a pale, rubbery pancake.
