Line the dish with pastry, crimp and chill 20 minutes.

Warm the syrup and cream together until steaming.

Whisk the eggs with the cornflour, melted butter and salt.

Temper the warm syrup into the eggs in a slow stream, whisking constantly.

Pour into the shell and bake at 180C for 35-40 minutes until set at the edges.
