Line the dish with pastry, crimp and chill 20 minutes.

Warm the maple syrup with the cream until steaming, then cool slightly.

Whisk the eggs with the cornflour, melted butter and salt.

Pour the warm syrup into the eggs in a thin stream, whisking constantly.

Pour into the shell and bake at 180C for 35-40 minutes until set at the edges with a slight wobble in the middle.

Cool completely before slicing.
