Instructions

Rinse the peas and put them in the pot with the ham bone, vegetables, bay leaf and water.

Bring to the boil and skim well.

Simmer partly covered for 1 hour 45 minutes until the peas collapse.

Lift out the bone, pull off the meat and return it to the pot.

Mash some of the soup against the side to thicken it and season with pepper.

Add salt only at the end โ the ham may be salty enough.

Skim carefully in the first ten minutes or the soup turns cloudy and greasy.
