If using dried posole, drain the soaked corn. Put it in a stockpot with the pork, quartered onion, 3 garlic cloves, bay leaves and water.

Bring to a boil and skim off any foam. Cover and simmer for 2 to 2.5 hours until the posole opens up and pork is tender.

Toast the chile pods in a dry skillet. Soak them in 2 cups hot water for 20 minutes until soft.

Blend the softened chiles with their soaking water, remaining garlic and oregano. Pour the sauce through a sieve.

Stir the red chile sauce and chopped onion into the pot. Simmer uncovered for 30 minutes more.

Season with salt to taste and remove the bay leaves. Serve hot with shredded cabbage, radish and lime on the side.
Chef's tips
Dried posole (hominy) gives the best chew, but needs an overnight soak. Canned hominy is a great shortcut for a fast weeknight meal.
Storage
Refrigerate up to 5 days; the flavor deepens the next day. Freezes well for up to 3 months.
Reheating
Reheat over medium-low heat, stirring occasionally, adding a little water if it has thickened.

- •Using canned hominy without draining it well, which waters down the broth.
- •Adding the red chile sauce too early and letting it burn on the bottom of the pot.
- •Skipping the garnishes like shredded cabbage, radish, oregano and lime, which are key to the dish.
