Instructions

Pressure cook the soaked rajma (kidney beans) with salt until soft, about 6-7 whistles.

Heat mustard oil in a kadai (deep curved pan). Add cumin seeds and let them sizzle.

Add the onions. Fry them until they turn golden brown.

Add the garlic-ginger paste. Cook until it smells fragrant.

Add tomato puree, turmeric, chilli and coriander powder. Cook until the oil separates.

Add the boiled rajma along with its cooking liquid.

Simmer for 20-25 minutes. Mash a few beans to thicken the gravy.

Adjust the seasoning to taste and serve hot.

Mash some beans against the side of the pan to thicken the gravy naturally without any extra thickeners.
