Render the salt pork or bacon in a large pot over medium heat until crisp, then remove and set aside, leaving the fat in the pot.

Cook the onion in the fat until soft.

Add the potatoes and clam juice or stock, bring to a boil, then simmer 15 minutes until potatoes are tender.

Stir in the milk and cream and heat gently.

Add the chopped clams and cooked pork, and warm through for 3-5 minutes without boiling hard.

Season with salt and pepper and serve hot.
