Render the salt pork or bacon in a large pot until crisp, then remove and set aside.

Cook the onion in the remaining fat until soft.

Add the potatoes and stock and simmer for 15 minutes until the potatoes are tender.

Add the fish, scallops and shrimp and simmer gently for 4-5 minutes until just cooked through.
