Chef's tips

Chill the shaped patties for 20 minutes before frying if the mixture feels soft, so they hold together better.

Ingredient substitutions

  • white fish โ†’ canned salmon for a different, equally traditional version

Storage

Keeps 2 days in the fridge.

Reheating

Reheat in a frying pan over medium heat to re-crisp, or in a 180C oven for 10 minutes.

Common mistakes to avoid

  • โ€ขOvermixing, which makes cakes dense
  • โ€ขFrying at too high heat, browning the outside before the inside heats through

Serving suggestions

Serve with baked beans, chow chow relish, or a green salad
