Instructions

Preheat the oven to 200C (400F) and line a pie dish with one pastry disc.

Layer the sliced potatoes and onion in the crust, seasoning each layer with salt, pepper and savory.

Dot the top layer with butter, then pour the milk or cream evenly over the filling.

Cover with the second pastry disc, seal and crimp the edges, and cut a few steam vents.

Bake for 20 minutes at 200C, then reduce to 180C (350F) and bake a further 35-40 minutes until the crust is golden and potatoes are tender when pierced through a vent.

Rest for 10 minutes before slicing.
Chef's tips
Slice the potatoes thin and even so they cook through in the time it takes the crust to brown.

Reheat slices in a 180C oven until warmed through, about 15 minutes.
