Scrub cockles thoroughly in cold water and discard any with cracked shells or those that stay open when tapped.

Place cockles and water into a large saucepan over high heat on the hob, then cover with a tight lid.

Steam cockles for 3 to 4 minutes, shaking the pan occasionally, until all shells pop open fully.

Strain cockles through a fine-mesh sieve lined with kitchen paper into a jug, reserving the clear cockle liquor.

Pick cockle meat from open shells and set aside, discarding shells and any cockles that failed to open.

Melt butter in a clean saucepan over medium heat, add diced bacon, and fry for 3 minutes until lightly browned.

Add sliced leeks and fry gently for 5 minutes until soft, sweet, and translucent without browning.

Pour in the reserved cockle liquor, fish stock, diced potatoes, and the bay leaf.

Bring the broth to a gentle simmer, cover, and cook for 12 to 15 minutes until potatoes are fork-tender.

Stir in reserved cockle meat, chopped parsley, and black pepper, simmering gently for 2 minutes just to warm through.

Chef's tips
Always strain the cockle steaming liquid through a fine sieve lined with kitchen paper to remove any trapped estuary sand. Add the cockles right at the end of cooking so they remain tender and do not turn rubbery. Taste before adding extra salt, as cockle liquor and bacon naturally provide plenty of seasoning.
