Saute diced onion in butter until it turns soft and clear.
- 3
Mix flaked salmon, cooked rice, sauteed onion, dill, salt, and pepper in a large bowl.
- 4
Spread half of the salmon-rice mixture evenly across the bottom crust.
- 5
Lay sliced hard-boiled eggs over the mixture in an even layer if using.
- 6
Cover with the rest of the salmon-rice mixture. Press down gently to compact it.
- 7
Lay the second round of dough over the top. Pinch and seal the edges tightly.
- 8
Cut a few small slits in the top crust for steam. Brush the top with egg wash.

Bake for 40-45 minutes until the crust turns deep golden brown.
- 10
Let the pie rest for 10 minutes before slicing and serving.
Chef's tips
Use day-old cooked rice so the filling holds together without getting soggy. Do not skip the fresh dill, as it gives this dish its classic flavor.
Storage
Refrigerate leftovers wrapped tightly for up to 3 days.
Reheating
Reheat slices in a 350Β°F oven for 10-15 minutes to keep the crust crisp.
Common mistakes to avoid
- β’Using warm, freshly cooked rice, which makes the inside of the pie soggy.
- β’Failing to pinch the dough edges tightly, letting the filling leak out while baking.
