    Salt the skin heavily. Let the pig marinate overnight in the refrigerator or a cool area.

    Mount the pig on a spit. Set it over hot charcoal at a steady, moderate distance from the coals.

    Rotate continuously for 5-6 hours with even heat. Brush occasionally with pan drippings.

    In the final hour, move closer to hotter coals. Cook until the skin blisters and turns crisp all over.

    Rest for 20-30 minutes before carving. Separate the crispy cuero (skin) from the meat and serve both.

Turn the pig steadily and keep the coals at an even, moderate heat. Rushing with high heat burns the skin before the meat cooks through.
