Instructions

  1. 1

Beat the cream cheese, sugar, and vanilla together until completely smooth.

  2. 2

Cut the puff pastry sheets into rectangles.

  3. 3

Spread a strip of the cream cheese filling along one edge of each rectangle.

  4. 4

Roll the pastry around the filling into a log. Tuck in the sides tightly to seal.

  5. 5

Place them seam-side down on a lined sheet pan. Brush the tops with egg wash.

  6. 6

Bake at 400°F for 18-20 minutes until puffed and deep golden brown.

  7. 7

Let them cool slightly. Whisk the powdered sugar with milk and drizzle it over the warm quesitos (cream cheese pastries).

  8. 8

Serve them warm or at room temperature.

Chef's tips

Keep the puff pastry cold in the fridge until ready to use. Warm dough gets sticky, hard to shape, and bakes unevenly.

Storage

Store at room temperature up to 2 days or refrigerate up to 5 days.

Reheating

Warm briefly in a toaster oven to re-crisp the pastry.

Common mistakes to avoid

  • Adding too much cream cheese filling, which makes it leak out during baking.
  • Skipping the egg wash, which leaves the pastry pale and dull instead of shiny.

Serving suggestions

Serve warm with a cup of café con leche (strong coffee with hot milk).Drizzle with extra sugar glaze right before serving.
