Instructions

    Spread the cut cauliflower, turnip and carrot onto a clean cloth. Leave them in the sun for a day to dry out surface moisture.

    Heat the mustard oil until it starts smoking. Let it cool down completely.

    Stir the crushed mustard seeds, fennel, chilli powder, turmeric and salt into the cooled oil.

    Add the sun-dried vegetables to the spiced oil. Toss everything well until fully coated.

    Pack the mixture into a clean, dry glass jar. Press down firmly so the vegetables stay covered in oil.

    Keep the jar in the sun for 5-7 days. Stir it daily using a clean, dry spoon.

    When the vegetables soften slightly and the flavours blend, store the jar in a cool place.

Chef's tips

Drying the cut vegetables in the sun removes water that could spoil the achaar (pickle). Giving the jar daily sun for the first week helps the spices soak in and preserves the pickle longer.
