Instructions

    Knead the flour with water and salt into a soft dough. Let it rest for 20 minutes.

    Finely grate the cauliflower and sprinkle with salt. Rest for 10 minutes, then squeeze out all excess moisture.

    Mix the grated cauliflower with green chilli, ginger, coriander, ajwain (carom seeds) and garam masala.

    Divide the dough and the filling into equal portions.

    Stuff each dough ball with filling and seal the edges. Roll it out gently into a flat round.

    Cook on a hot tawa (flat griddle), spreading ghee (clarified butter) on both sides, until golden and crisp.

    Serve hot with curd (yoghurt), pickle or a glass of lassi (yoghurt drink).

Squeeze all the liquid from the grated cauliflower so the paratha (stuffed flatbread) does not tear or get soggy.
