Instructions

Break the dried vadiyan (lentil dumplings) into small, rough pieces.

Heat half the mustard oil in a pan. Fry the vadiyan pieces until golden and crisp, then set them aside.

Heat the remaining oil in the same pan. Add the cumin seeds and let them sizzle and pop.

Add the onion. Fry until it turns golden brown.

Stir in the ginger garlic paste and cook until it smells aromatic.

Add the tomato puree, turmeric, and chilli powder. Cook until the oil separates from the sauce.

Pour in the water to make a gravy and bring to a boil. Add the fried vadiyan.

Simmer gently for 10-12 minutes until the vadiyan soften slightly. Stir in the garam masala and coriander.
Chef's tips
Frying the vadiyan before adding them to the gravy gives them a better texture and stops them from breaking apart. Add extra water if needed, as the dumplings soak up liquid as they cook.

Refrigerate up to 2 days in an airtight container.
