Instructions

  1. 1

Preheat your oven to 150°C (130°C fan).

  2. 2

Grease a 1.5-litre shallow ceramic baking dish generously with butter.

  3. 3

Scatter the unrinsed pudding rice, caster sugar, sultanas, and sea salt into the base of the dish.

  4. 4

Pour in the cold whole milk, double cream, and vanilla extract.

  5. 5

Stir gently with a spoon to distribute the rice grains and dissolve the sugar.

  6. 6

Grate fresh nutmeg and sprinkle the cinnamon evenly over the milk surface.

  7. 7

Dot the small pieces of diced butter across the top.

  8. 8

Bake uncovered for 30 minutes, then carefully stir once to release settled grains from the bottom.

  9. 9

Bake undisturbed for a further 2 hours until the rice is tender and a dark golden skin forms.

  10. 10

Rest the pudding for 10 minutes before spooning into warm bowls.

Chef's tips

Do not rinse the pudding rice, as the natural surface starch creates the signature velvety custard. Resist stirring after the initial 30-minute mark so a rich, caramelised skin can form properly.

Ingredient substitutions

  • double creaman equal quantity of additional whole milk for a lighter texture
  • sultanascurrants or dried cranberries, or omit entirely for a plain pudding

Storage

Store leftovers covered in the refrigerator for up to 3 days.

Reheating

Reheat gently in a warm oven or microwave with a splash of extra milk to loosen.

Common mistakes to avoid

  • Baking at too high a temperature, which curdles the milk before the rice softens
  • Rinsing the rice beforehand, resulting in a thin, watery pudding
  • Stirring late in baking, which destroys the coveted browned skin
