Instructions

Put the pork, milk, onion and garlic in a heavy pan and break the meat up thoroughly with a fork.

Bring gently to a simmer, stirring so the milk does not catch.

Simmer uncovered on low for 1 hour 15 minutes, stirring every 10 minutes, until the mixture is thick and pale.

Stir in the breadcrumbs, cinnamon, cloves, salt and pepper and cook 10 minutes more.

Pack hot into crocks, smooth the tops and cool to room temperature.

Chill for at least 6 hours so the fat sets and the spread firms.

Keep the heat very low — boiling splits the milk and gives a grainy texture.

- breadcrumbs → rolled oats blitzed fine, or omit for a looser spread

Keeps 1 week covered in the fridge, or freeze the crocks for 2 months.
