Line the pie dish with pastry, crimp the edge and chill for 20 minutes.

Whisk the brown sugar with the flour and salt to break up all lumps.

Whisk in the cream, melted butter, egg and vanilla until smooth.

Pour into the chilled shell and bake at 190C for 15 minutes.

Lower to 165C and bake 25 minutes more until the edges are set and the centre still trembles.

Cool completely — the filling firms as it cools — and serve in small slices.
