Instructions

    Pack a tray with clean snow and keep it outdoors or in the freezer until needed.

    Bring the syrup to the boil in a deep pan with the knob of butter to keep the foam down.

    Boil without stirring until the thermometer reads 112-114C, about 10-15 minutes.

    Take the pan off the heat and let the bubbling settle for 30 seconds.

    Pour the hot syrup in short ribbons across the cold snow.

    Wait 10 seconds, then roll each ribbon onto a stick and eat straight away.

Chef's tips

Temperature is everything: below 112C the taffy runs, above 116C it snaps hard.

Storage

Eat fresh; taffy does not keep.
