Chef's tips
The dough for a Sally Lunn bun is far wetter than standard loaf dough, closer to a thick batter. Resist adding extra flour, as the moisture gives the bun its signature airy texture. For authentic service, slice horizontally into thick discs and toast under a hot grill before buttering.
Ingredient substitutions
- fast-action dried yeast โ 15g fresh yeast dissolved into the warm milk
- whole milk โ semi-skimmed milk
Storage
Store the un-toasted bun in an airtight tin at room temperature for up to three days.
Reheating
Slice into thick horizontal rounds and toast under a medium grill for two minutes per side.
Common mistakes to avoid
- โขAdding extra flour to make a kneadable dough, which results in a heavy and dense bake.
- โขProving in a spot that is too hot, which collapses the delicate yeast structure.
- โขAttempting to slice the bun straight from the oven before it has cooled and set.
