Stir the sourdough starter and water together until the starter dissolves completely.

Add the flour and salt. Mix until a rough, sticky dough forms.

Let the dough rest for 30 minutes. Knead it gently for a short time.

Stretch and fold the dough edges several times as it rises, about 4-6 hours.

Shape the dough into a round ball. Place it seam-side up in a floured proofing basket (banneton).

Put the dough in the refrigerator overnight to rise slowly, about 8-12 hours.

Heat a Dutch oven at 475Β°F. Slash the top of the loaf and bake covered for 20 minutes.

Take the lid off and bake 20-25 minutes more until deeply golden. Cool completely before slicing.

A starter fed regularly for at least a week gives the best rise and sour flavor. Slash the top firmly right before baking to guide how the bread opens in the oven.
Storage
