Instructions

    Beat the eggs with the cream and milk, then work in the flour, baking powder and salt to a soft dough.

    Rest the dough 20 minutes so it rolls without springing back.

    Roll very thin and cut into 8x12 cm rectangles, then cut a slit down the middle of each.

    Heat the oil to 185C and fry a few at a time until puffed and golden, about 90 seconds a side.

    Drain on paper and serve immediately, while still hot.

    Eat with cold watermelon — the traditional pairing.
