Instructions

    Melt the butter, stir in the flour and cook 1 minute, then whisk in the milk and simmer to a thin sauce. Season.

    Layer potato, onion and ham in a buttered dish, pouring sauce over each layer.

    Cover with foil and bake at 175C for 60 minutes.

    Uncover, add the cheese if using and bake 30-35 minutes more until browned and tender to a knife.

    Rest 15 minutes before serving.
