Instructions

Toss the diced lamb with the plain flour, salt, and black pepper in a bowl to coat evenly.

Heat the vegetable oil in a large casserole dish over medium-high heat on the hob.

Brown the lamb in two batches until deep golden brown on all sides, then remove to a plate.

Add the chopped onions to the casserole dish and fry for five minutes until soft and translucent.

Return the browned lamb and any resting juices back into the dish.

Stir in the carrots, neeps (swede), rinsed pearl barley, and thyme sprigs.

Pour in the hot lamb stock, scraping up any caramelised bits stuck to the base of the dish.

Bring the liquid to a gentle boil, then reduce the heat to low.

Cover with a tight-fitting lid and simmer gently on the hob for one hour.

Add the tatties (potatoes), replace the lid, and simmer for another thirty minutes until the lamb is meltingly tender.

Brown the lamb thoroughly in batches without crowding the pan to build deep, rich flavour. If you prefer a thicker broth, leave the lid slightly ajar for the final fifteen minutes of simmering.

Storage
Cool completely and store in an airtight container in the fridge for up to three days.

Reheat gently in a pot over medium-low heat on the hob, adding a splash of stock or water if the barley has thickened the broth.
