Pre-heat your fan oven to 160°C (180°C conventional) and line two baking trays with greaseproof paper.

Beat the softened butter and caster sugar together in a mixing bowl until pale and light.

Stir in the egg yolk and milk until completely combined.

Add the finely grated lemon zest, ground nutmeg, caraway seeds, and dried currants to the creamed mixture.

Sift the plain flour and fine sea salt into the bowl.

Mix gently with a wooden spoon to form a cohesive, firm biscuit dough.

Roll out the dough on a lightly floured surface to roughly 5mm thickness.

Cut into rounds using a 6cm fluted cutter and transfer onto the prepared baking trays.

Bake for 12 to 15 minutes until the biscuits are a delicate pale golden colour around the edges.

Sprinkle the warm biscuits immediately with extra caster sugar and transfer onto a wire rack to cool completely.
