Instructions
- 1
Cook linguine in salted boiling water until tender with a slight bite. Save a cup of pasta water and drain the pasta.
- 2
Heat olive oil and half the butter in a large skillet over medium-high heat.
- 3
Add garlic and red pepper flakes. Cook for 30 seconds until fragrant.
- 4
Add spot shrimp to the skillet. Cook for 1-2 minutes per side until just pink and opaque.
- 5
Pour in white wine and lemon juice. Simmer for 2 minutes.
- 6
Remove the shrimp from the pan. Stir in the remaining butter to finish making the sauce.
- 7
Toss the cooked linguine into the skillet. Add a splash of pasta water to loosen the sauce.
- 8
Return the shrimp to the pan. Toss with parsley and serve immediately.
Chef's tips
Spot shrimp cook very fast because they are naturally sweet and tender. Take them off the heat the moment they turn opaque so they do not get rubbery.
Storage
Refrigerate leftovers for up to 1 day; shrimp toughens with reheating.
Reheating
Reheat gently in a skillet over low heat with a splash of water.
Common mistakes to avoid
- •Overcooking the delicate shrimp.
- •Skipping the saved pasta water, which can leave the sauce too thin or greasy.
