Instructions

Heat the oil in a large pot over medium heat. Cook the onion for 5 minutes until softened.

Add the garlic and cumin. Cook for 1 minute more until fragrant.

Pour in the vegetable stock. Bring the liquid to a simmer.

Add the squash and beans. Simmer for 15 minutes until the squash is nearly tender.
