Preheat your oven with a pizza stone or steel inside to 500Β°F. Let it heat for at least 45 minutes.

Dust a pizza paddle with semolina. Stretch the pizza dough on it into a thin 14-inch round.

Brush a light layer of olive oil over the dough all the way to the edges.

Scatter the shredded mozzarella evenly over the dough. Leave a small border around the edge.

Season the crushed tomatoes with salt and oregano. Spoon swirls of sauce over the cheese, leaving some cheese showing.

Slide the pie onto the hot stone. Bake 8-12 minutes until the crust is browned and the cheese is bubbling.

Remove the pie and sprinkle with grated Pecorino Romano. Let it rest for 2 minutes before cutting into squares.

Assemble this pie in reverse: place the cheese directly on the dough, then spoon sauce over it in swirls. Bake on a very hot stone or steel for a crisp, thin crust.
