Instructions

Preheat the oven to 160°C (140°C fan).

Grease a 20 cm square baking tin and line the base with greaseproof paper.

Whisk the plain flour, oatmeal, dark brown sugar, ground ginger, mixed spice, bicarbonate of soda, and salt together in a bowl.

Melt the butter, black treacle, and golden syrup in a saucepan over low heat on the hob until just combined.

Pour the warm treacle mixture over the dry ingredients.

Whisk the beaten egg and milk together in a separate jug.

Pour the milk mixture into the bowl and stir gently until a loose, smooth batter forms.

Pour the batter into the lined tin and tap gently on the worktop to release air bubbles.

Bake for 45 to 50 minutes until risen and a skewer inserted in the centre comes out clean.

Leave the cake to cool in the tin for 20 minutes, then transfer to a wire rack.
Chef's tips
Moggy cake improves with keeping. Wrap the cooled cake in greaseproof paper and store in a tin for one or two days before slicing, which allows the treacle to soften and moisten the crumb.
Ingredient substitutions
- fine oatmeal → rolled porridge oats ground briefly in a blender
- unsalted butter → traditional block lard or baking block
Storage
Store in an airtight tin wrapped in greaseproof paper at room temperature for up to 5 days.
Reheating
Warm individual slices in a low oven at 150°C for 5 minutes or microwave for 10 seconds.
Common mistakes to avoid
- •Boiling the treacle and butter mixture, which will make the finished cake tough and dry.
- •Over-baking, which dries out the oatmeal before the treacle has time to settle into a soft crumb.
- •Slicing the cake while hot straight from the oven, causing the tender crumb to crumble.
