Instructions

Heat oil in a large pot and sauté onion until translucent.

Add carrot, turnip, parsnip and potato, and stir to coat in the oil.

Pour in stock and add thyme.

Bring to a boil, then reduce heat and simmer 25-30 minutes until vegetables are very tender.

Purée with an immersion blender until smooth, or blend in batches.
